Makoto Kanemaru
Born and raised in Yamanashi prefecture near Mt. Fuji in Japan. Brings over 30 years of chef experience. Started to learn cooking skills when he was 18 years old and trained at a traditional Japanese cuisine restaurant in Tokyo. Experienced cooking and serving for the Emperor of Japan and his royal family when he served as Executive Chef at a resort hotel in Nagano, Japan.
Now excited to share his knowledge and skill to provide this beautiful authentic Japanese cuisine and culture to many in the community in San Francisco, CA, being the 架け橋 "Bridge" between our two friendship countries, the U.S.A. and Japan!
金丸 信
1973年、富士山の麓、山梨県生まれ。18歳から料理人の人生が始まり、現在まで30年以上の経験。東京の皇室御用達日本調理師会のレストランで厳しい修行を積む。天皇（当時皇太子）御一家がプライベートで来られる御用達の長野県のホテルで4年間和食レストランの料理長を務める。2022年4月、居酒屋スタイルのラーメン屋、”麺屋金丸ゴールデンラーメン”をサンフランシスコにオープン。そして今までの経験をさらに生かし、本格日本料理をお手軽に味わってもらいたい、知ってもらいたいという思いで、”あかり”をオープン。アメリカと日本の架け橋になって日本の料理を、日本の文化を伝えたい。
